Fiesta Friday #17 and Quinoa Burgers

Happy Friday everyone! I’m super excited to be co-hosting Fiesta Friday today along with Selma and Jhuls and of course the lovely Angie! I hope many of you have a long weekend coming up and can kick it off with today’s Fiesta! For anyone who doesn’t know or who hasn’t joined yet Fiesta Friday is a weekly blog party. Today I’m bringing quinoa burgers to the party. Yes, I’ll be that person that’s bringing the healthy dish, but I’m pretty sure you’ll enjoy it! I really like these burgers because you can change them up however you like. Add different vegetables or spices to either use up what you have in the fridge or put your own spin on them!

You can of course eat these with a bun like a regular burger, but I prefer them with just lettuce, tomato and a little chipotle ketchup. Add a side of sweet potato fries and you’ll feel like you’re eating at your favorite burger joint!

Quinoa Burgers
Yield: 10 Burgers
3 cups water
1 1/2 quinoa
3 carrots
1/4 cup fresh parsley
1/4 cup green onions, chopped
2 eggs
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1 tablespoon paprika
1 1/2 teaspoons cumin

1. Preheat oven to 350. Add the water and the quinoa to a pot and bring to a boil. Once it begins to boil lower to a simmer and continue to cook until all the liquid has evaporated. Add the cooked quinoa to a bowl and let it cool off a bit.

2. Chop the carrots and parsley in a food process, or by hand if you don’t have one. Add the carrots, parsley and chopped green onions to the bowl with the quinoa.

3. Add the eggs and spices to the bowl with the quinoa and combine them all together.

4. Prepare a baking sheet with parchment paper. Form the mixture into 10 good sized burgers and place them on the baking sheet. Bake at 350 for 25-30 minutes, until the top starts to brown. Enjoy!

    1. I’m happy to be co-hosting! I used to do these in a pan on the stove but I could never get them to hold their shape that way, hence now baking them! And it does reduce the oil

  1. Healthy and tasty! That’s should be everybody’s cooking philosophy. I’ve been trying out quinoa myself, but haven’t ventured much beyond adding it to salads or using it as rice substitute, so this one is appreciated. 🙂

  3. Thanks for co-hosting! I love Fiesta Fridays!! I’ve used quinoa to make crab cakes before, and this looks like another great use. And, sweet potato fries have been my favorite side as of late. Thanks for bringing them to the fiesta! 🙂

  6. Thanks for the recipe Alex; I make my own turkey burgers, buy my black bean burgers and now I will add you healthy burger to my list. I have been using quinoa a lot more lately and what a great way to eat it as a burger :P)

  9. I really want to like quinoa, but it’s so light and airy . . . so I think binding them with egg an veggies into a patty might be the answer to get this nutritious grain into our household! We love burgers, so why not quinoa??? Thanks also for co-hosting Alex!

    1. I hope this helps you enjoy quinoa! You can also mix the spices up to if that makes it more appealing to you You could make this really spicy if you like.

  10. Thanks for co-hosting!!! Oh my quinoa I have yet to learn how t cook this properly. My first attempt was doable and then second attempt complete fail. I have yet to try again! Any tips?

    1. Oh no! I always cook it with a little more water than the package suggests. and turn the heat down right when it starts to boil. You should also rinse it before cooking it (I have to admit sometimes I forget to do this). Hope that helps!

    1. Thank you so much! I’ve been trying to cut out red meat as often as possible and quinoa is a great option when I’m sick of chicken!
